Eggs For Dinner


Only 2 days until Thanksgiving! 2 days until turkey, dressing, and more calories than any one person needs in a day. So am I planning lots of skinny versions of those classic favorites to try and combat the overload? No way! While I love to trim down some of our favorite meals, I leave holiday food as the amazing treat it is and say everything in moderation. I do, however, attempt to offset some of it with a Thanksgiving morning run and a few prior days of really light meals and lots of h20. I think of it as detox to re-tox. Ha. Basically I’m all about making sure my body is as ready as it can be for all the sodium and garbage that will come on Thursday (I HATE the gross feeling that comes with sodium overload…H20 all day, every day during the holidays!) AND I want to wake up Monday still fitting in my jeans so I’m cooking up some of my favorite protein and veggie-filled meals that pack a small carb and calorie punch. This egg skillet is a great brunch if you want a light option to offer your guests Friday or Saturday post-turkey coma OR as I used last night, as a meatless dinner leading up to Turkey day. It has all the flavor of a great Italian dish with the calorie count of a salad all while leaving you full in less than 15 minutes of kitchen time and 1 skillet! Save the heavy prep and mess for the big day and cook up a light, 15 minute, 1 skillet meal tonight! 




1/4 cup chopped onion

1 large zeccunni, shredded

1 cup diced tomatoes 

4 eggs

1/2 tsp oregano 

1/2 tsp basil

1/2 tsp thyme

1 tbsp grated parmasean 


 Heat a large skillet over medium heat. Sauté onions 2-3 minutes then add zeccunni and cook an additional 2-3 minutes. Add cup of tomatoes on top, create 4 little dents and crack an egg into each one. Top with remaining 4 ingredients and cook uncovered 2-3 minutes. Reduce heat to med-low and cover. Cook an additional 3-6 minutes based on egg preference. Slice into 4 pieces giving each piece an egg. Serve immediately!
