After several insanely busy weeks of long work days and obligations, celebrations both in and out of town, and the silly stresses of life attempting to take over, I’m back and feeling somewhat settled. Anyone who knows me at all knows I LOVE routine. Being back on a “somewhat normal” schedule I’m embracing my morning workouts, evening puppy time, and of course, being in my kitchen. I’m always obsessing over good southern food and looking for ways to shave a few calories and/or add a boost of something healthy to the recipe. I’ve been working on my homemade biscuit recipe for a bit and I’ve finally landed on something that pulls both the health and taste I want. Added bonus…they’re super simple to make!
EASY PEASY HOMEMADE BISCUITS
•1 cup of all-purpose flour
•1.5 tsp baking powder
• 1/8 cup of coconut oil ( room temp)
• 3oz unsweetened plain almond milk
•Preheat oven to 425.
• Mix flour, baking powder, and coconut oil in a mixing bowl and “cut” the oil into the flour/powder mixture with a pastry cutter ( 2 forks will work if you don’t have a pastry cutter.) do this until the mixture resembles small balls.
•Stir in the milk and mix with a spoon until the mixture no longer sticks to the bowl.
•Cover a cutting board with flour and roll the dough out to 1/4-1/2″ depending on thickness desired.
•Cut biscuits with a biscuit cutter ( or the top of a 2″ glass if you’re like me and can’t find yours…)
•Transfer to a baking pan and bake for 12-15min or until the top of the biscuits begin to brown. Serve immediately!
*this recipe makes 6 biscuits so adjust upward if you’re cooking for a crowd.
